Ropa Vieja Recipe

Few dishes capture the warmth and comfort of Cuban home cooking quite like Ropa Vieja. This slow-cooked shredded beef dish is simmered in a rich tomato sauce with colorful bell peppers, onions, garlic, and bold spices. The name translates to โ€œold clothes,โ€ inspired by the tender strands of beef that resemble torn fabric. Traditionally served with white rice, black beans, and fried plantains, this hearty meal is packed with savory flavor and satisfying texture.

What Is Ropa Vieja?

Ropa Vieja is considered one of Cubaโ€™s most iconic dishes, though its roots trace back to Spain and the Canary Islands. The classic preparation features beef slowly braised until fork-tender, then shredded and simmered in a tomato-based sofrito with peppers, onions, olives, and aromatic spices.

This version uses chuck roast for rich flavor and melt-in-your-mouth texture, inspired by traditional and modern interpretations of the dish.

  • Sharp knife
  • Cutting board
  • Tongs
  • Forks for shredding

Step-by-Step Instructions

Step 1: Season and Sear the Beef

Pat the chuck roast dry using paper towels. Season generously with salt and black pepper on all sides.

Heat olive oil in a large Dutch oven over medium-high heat. Sear the beef for about 4โ€“5 minutes per side until deeply browned. Remove from the pot and set aside.

Step 2: Cook the Vegetables

In the same pot, add sliced onions and bell peppers. Cook for 6โ€“8 minutes until softened and slightly caramelized.

Stir in the garlic and cook for another minute until fragrant.

Step 3: Build the Sauce

Add tomato paste and stir for 1 minute. Pour in the white wine and scrape up any browned bits from the bottom of the pot.

Add crushed tomatoes, beef broth, cumin, smoked paprika, oregano, bay leaf, olives, and capers if using.

Step 4: Slow Cook the Beef

Return the beef to the pot and spoon some sauce over the top.

Cover and simmer on low heat for about 2ยฝ to 3 hours, or until the beef becomes fork-tender and easy to shred.

Step 5: Shred the Meat

Remove the beef from the pot and shred it using two forks.

Return the shredded beef to the sauce and simmer uncovered for another 10โ€“15 minutes so the flavors meld together beautifully.

Step 6: Serve and Enjoy
