New Orleans Chicken Wings

These New Orleans Chicken Wings are made for people who like their wings big on flavour. The chicken is coated in a bold homemade Creole-style seasoning, tossed with garlic butter, and baked until the skin turns beautifully golden and the seasoning becomes slightly caramelised. The result is savoury, smoky, garlicky, lightly sweet and just spicy enough to keep things interesting.

You do not need a deep fryer or a complicated marinade for these wings. A good spice blend, plenty of garlic butter and enough space on the baking tray do most of the work. They are perfect for game nights, casual parties, weekend snacking or a dinner when plain chicken simply will not do.

What You Can Do Better

  • Do not crowd the baking tray: Give the wings some room so the heat can circulate properly and the juices can reduce instead of steaming the chicken.
  • Pat the wings dry: Removing excess moisture helps the seasoning stick better and gives the skin a better chance of browning.
  • Season in stages: Adding the spice mixture gradually helps coat every piece more evenly.
  • Baste during cooking: The buttery juices in the tray become more concentrated as the wings cook, adding extra flavour and colour.
  • Adjust the heat to your taste: Use less cayenne for mild wings or add a little extra if you prefer more of a kick.
  • Serve immediately: These wings are at their best straight from the oven while the skin is hot and the garlic butter is still glossy.

How to Make New Orleans Chicken Wings

1. Prepare the Oven and Tray

Preheat the oven to 400°F (200°C). If using a fan oven, set it to 360°F (180°C). Line a large baking tray with foil and then place baking paper on top. This makes cleanup much easier once the buttery, caramelised juices start collecting in the tray.

2. Make the Garlic Butter

Combine the melted butter and minced garlic in a small bowl. Set it aside for a few minutes so the garlic can begin flavouring the butter.

3. Mix the Seasoning

Add the brown sugar, paprika, salt, garlic powder, onion powder, black pepper, thyme, oregano and cayenne pepper to another bowl. Stir well until everything is evenly combined.

4. Coat the Wings

Place the chicken wings in a large mixing bowl. Sprinkle over about half of the seasoning and toss thoroughly. Add the remaining seasoning and toss again until every wing is well coated. Pour the garlic butter over the wings and mix until they are glossy and evenly covered.

5. Arrange in a Single Layer

Spread the wings across the prepared baking tray in a single layer. Leave a little space between each piece. This small step makes a noticeable difference because crowded wings tend to steam instead of roast properly.

6. Bake and Baste

Bake for 45 to 50 minutes, depending on the size of the wings. After about 30 minutes, remove the tray and brush the wings with the juices collected at the bottom. Repeat again around the 40-minute mark.

The wings are ready when they are deeply golden, cooked through and lightly caramelised around the edges.

7. Finish and Serve

Give the wings one final generous coating of the tray juices. Transfer them to a serving platter and spoon any remaining buttery sauce over the top. Finish with chopped parsley or green onions and serve hot.

Tips for the Best Wings

  • Use fresh or fully thawed wings: Excess water can dilute the tray juices and slow down browning.
  • Choose a large tray: If necessary, divide the wings between two trays rather than piling them together.
  • Keep an eye on the sugar: Brown sugar helps create that rich caramelised coating, but it can darken quickly near the end of cooking.
  • Broil briefly if needed: If the wings are cooked but need more colour, place them under the broiler for a minute or two. Watch them closely.
  • Save every drop of the tray sauce: That concentrated mixture of chicken juices, butter, garlic and spices is one of the best parts of the recipe.

What to Serve with New Orleans Chicken Wings

These wings have plenty of bold flavour, so they work especially well with simple sides. Try them with coleslaw, corn on the cob, potato wedges, garlic bread, seasoned rice or a crisp green salad. For a party spread, serve them alongside celery sticks, carrot sticks and a cool, creamy dipping sauce.
