Crunchy Crumbed Chicken Drumsticks

These crunchy crumbed chicken drumsticks are the kind of dinner that disappears quickly from the table. The chicken stays juicy inside while the outside turns crisp, golden and full of flavour. Best of all, there is no deep frying involved. A well-seasoned crumb coating and a hot oven do most of the work, giving you satisfying chicken drumsticks with plenty of crunch and far less mess.

The secret is not just the breadcrumbs. Seasoning both the flour and the crumb coating helps build flavour from the first layer to the last. Panko breadcrumbs give the best crisp texture, while a generous coating of oil helps the crumbs turn evenly golden in the oven.

What You Can Do Better

For the crispiest result, do not skip drying the chicken. Moisture on the surface can make the coating patchy and prevent it from becoming properly crunchy. Pat each drumstick dry with paper towels before starting. It also helps to bake the chicken on a lightly oiled rack placed over a baking tray so the hot air can circulate around the drumsticks. Finally, be generous with the oil spray. A light mist may leave pale, dry-looking crumbs, while a good coating helps create that deep golden finish.

How to Make Crunchy Crumbed Chicken Drumsticks

Step 1: Prepare the Oven

Preheat the oven to 400°F (200°C), or 180°C for a fan-forced oven. Line a baking tray with foil or baking paper and place an oven-safe rack on top. Spray or brush the rack lightly with oil.

Step 2: Mix the Seasoning

Combine the oregano, basil, garlic powder, smoked paprika, cayenne, salt and black pepper in a small bowl. Add about one-third of the seasoning mixture to the flour and mix well. Stir the remaining seasoning into the panko breadcrumbs.

Step 3: Set Up the Crumbing Station

Place the seasoned flour in one shallow bowl, the beaten eggs in a second bowl and the seasoned panko in a third bowl. Pat the drumsticks completely dry before coating them.

Step 4: Coat the Chicken

Roll one drumstick in the flour and shake off the excess. Dip it into the beaten egg and allow the extra egg to drip away. Transfer it to the breadcrumb mixture and press the crumbs firmly onto all sides. Repeat until every drumstick is evenly coated.

Step 5: Add Oil

Arrange the crumbed drumsticks on the prepared rack with a little space between each one. Spray them generously with cooking oil. This step makes a noticeable difference to the colour and crunch of the finished coating.

Step 6: Bake Until Golden and Crunchy

Bake for about 25 minutes. Carefully turn the drumsticks over, spray the other side with more oil and continue baking for another 18 to 22 minutes. The chicken should be deeply golden, crunchy and cooked through. For food safety, the thickest part of the chicken should reach an internal temperature of 165°F (74°C).

Step 7: Rest and Serve

Let the drumsticks rest for about 5 minutes before serving. This gives the coating a little time to firm up and helps keep the chicken juicy.

Helpful Tips

  • Use panko if possible: Its larger, lighter crumbs create a crispier coating than many regular breadcrumbs.
  • Adjust the heat: Reduce or leave out the cayenne if you prefer mild chicken.
  • Keep one hand dry: Use one hand for the flour and egg and the other for handling the breadcrumbs. It makes the process much less messy.
