Homemade Butter Crackers

A good butter cracker should snap when you bite into it, leave a little salt on your fingertips, and taste just as good plain as it does with cheese. These homemade crackers have lightly browned edges and a crisp, tender texture. The dough comes together with everyday ingredients, and you can cut it into simple squares without reaching for a cookie cutter.

The detail that makes the biggest difference is thickness. Roll the dough evenly and thinly so the centers become crisp before the edges get too dark.

How to Make Homemade Butter Crackers

  1. Mix the dry ingredientsWhisk the flour, baking powder, sugar, and fine salt in a large bowl. Break up any lumps before adding the butter.
  2. Work in the butterAdd the cold butter and rub it into the flour with your fingertips or a pastry cutter. Stop when the mixture looks crumbly, with a few small, flattened pieces of butter still visible.
  3. Bring the dough togetherStir in the cream with a fork. Squeeze a small handful of dough: it should hold together. If it falls apart, add cold water one tablespoon at a time. Gather the dough gently without kneading it until smooth.
  4. ChillDivide into two flat discs, wrap, and refrigerate for 30 minutes. Heat the oven to 375°F (190°C), or 350°F (175°C) fan, and line two baking sheets with parchment paper.
  5. Roll and cutRoll one disc between lightly floured sheets of parchment to about 1/16–1/8 inch thick (roughly 2 mm). Peel away the top sheet and cut into 1 1/2-inch squares. Transfer to a prepared baking sheet, leaving a little space between pieces. Repeat with the remaining dough, gently rerolling scraps once.
  6. Prick and seasonPrick each cracker two or three times with a fork, pressing through the dough. If using flaky salt, brush the tops very lightly with water and add a small pinch.
  7. Bake and coolBake for 12–16 minutes, checking from 10 minutes onward. Rotate the tray halfway through and remove individual crackers early if they brown faster. Look for golden edges and dry centers. Transfer to a wire rack and cool completely; they become crisper as they cool.

What You Can Do Better

  • Keep the dough cold: If it becomes soft or greasy while rolling, refrigerate it for 10 minutes before continuing.
  • Check the middle: Run your fingertips gently across the rolled dough to find thick patches. These are usually the crackers that stay soft.
  • Go easy on extra flour: Too much makes the dough dry. Rolling between parchment helps keep sticking under control.
  • Use color as your guide: Pale crackers often need another minute or two. A little browning brings out the butter flavor.
  • Season thoughtfully: Add 1 teaspoon finely chopped rosemary or 1/2 teaspoon garlic powder to the flour for a savory variation.

Serving Suggestions

Serve with sharp cheddar, cream cheese, hummus, or a bowl of tomato soup. For a quick snack, spread a few with soft cheese and add thinly sliced cucumber and black pepper.

Storage

Once completely cool, store the crackers in an airtight container at room temperature for up to 5 days. Keep them separate from moist foods. If they soften, spread them on a baking sheet and warm at 300°F (150°C) for 4–6 minutes, then cool before serving.

Estimated Nutritional Information
