Haloumi Fries

Haloumi fries are the kind of snack that disappears almost as soon as you put them on the table. Thick pieces of salty haloumi cheese are coated in seasoned flour, egg and crispy breadcrumbs, then cooked until golden on the outside and warm and soft in the middle. Serve them with a cool garlic-yogurt dip and you have an easy starter, party snack or something fun to make when ordinary fries just won’t do.

Haloumi is especially good for this because it holds its shape when heated instead of melting away like many other cheeses. The result is a satisfying combination of a crunchy coating and chewy, salty cheese.

How to Make Haloumi Fries

1. Make the Dipping Sauce

Start with the dip so it has a little time to develop its flavor. Stir together the Greek yogurt, grated garlic, lemon juice, olive oil and a small pinch of salt. Cover and set aside while you prepare the cheese.

2. Cut the Haloumi

Pat the haloumi dry with paper towels. Cut it into thick sticks, roughly the size of chunky fries. Try to keep the pieces similar in thickness so they cook evenly.

3. Prepare the Coating

Place the flour in one shallow bowl and mix in the dried herbs, smoked paprika and black pepper. Put the beaten eggs in a second bowl. In a third bowl, add the panko breadcrumbs and a small pinch of salt.

4. Coat the Cheese

Take one piece of haloumi and coat it lightly in the seasoned flour. Shake away any excess, then dip it into the beaten egg. Let the excess egg drip off before rolling the cheese in the panko. Press the breadcrumbs gently onto the surface so the coating sticks well. Repeat with the remaining pieces.

5. Heat the Oil

Add enough neutral oil to a frying pan to create a shallow layer. Heat it over medium-high heat until hot. The oil should be hot enough to crisp the breadcrumbs quickly without leaving the cheese sitting in the pan for too long.

6. Fry Until Golden

Cook the haloumi fries in small batches, turning them as needed, until the coating is crisp and golden on all sides. This usually takes only a couple of minutes. Avoid overcrowding the pan because it can lower the oil temperature and make the coating greasy.

7. Drain and Serve

Transfer the cooked fries to a plate lined with paper towels to remove excess oil. Serve immediately with the garlic yogurt dip. Haloumi fries are at their best while the coating is still crisp and the cheese inside is warm.

Air Fryer Haloumi Fries

If you would rather skip shallow frying, the air fryer works very well for this recipe. Lightly spray the coated haloumi with cooking oil and arrange the pieces in a single layer in the air fryer basket. Cook at about 200°C (390°F) until the coating is crisp and golden, turning or shaking the basket halfway through. Cooking time can vary between air fryers, so start checking them after about 7 minutes.

Oven-Baked Haloumi Fries

For an oven version, place the coated haloumi on a lightly greased wire rack set over a baking tray. A light coating of oil on the breadcrumbs helps them brown and crisp. Bake at 200°C (400°F) until golden and crunchy, turning the fries once during cooking. The oven method is convenient, although the crust will generally be a little less crisp than the shallow-fried version.

What You Can Do Better

  • Dry the haloumi first: Removing excess moisture helps the flour and breadcrumbs cling to the cheese.
  • Use panko breadcrumbs: They create a lighter, crunchier coating than many standard breadcrumbs.
  • Don’t skip the seasoning: Haloumi is naturally salty, but herbs, paprika and pepper give the crust more depth.
  • Keep the oil hot: If the oil is too cool, the breadcrumbs can absorb more oil before becoming crisp.
  • Cook in batches: Giving the fries plenty of room helps them brown instead of steaming.
  • Serve immediately: The contrast between the crisp coating and warm cheese is what makes these fries especially good.
  • Watch the salt: Haloumi is already quite salty, so keep additional salt in the coating and dip to a minimum.

What to Serve with Haloumi Fries

The garlic yogurt sauce is an easy match, but you can change things up depending on what you have in the kitchen. A squeeze of fresh lemon, honey, sweet chili sauce, marinara sauce or a simple herb dip can all work nicely. They also make a fun addition to a Mediterranean-style spread alongside olives, hummus, salad and warm flatbread.

Can You Make Haloumi Fries Ahead?

They are best cooked just before serving, but you can prepare the cheese and coat the pieces ahead of time. Keep the crumbed fries covered in the refrigerator until you’re ready to cook them. If you have leftovers, reheat them in an oven or air fryer rather than a microwave so the coating has a chance to crisp up again.

Frequently Asked Questions

What is haloumi?

Haloumi, also commonly spelled halloumi, is a firm cheese traditionally associated with Cyprus. It has a salty, slightly tangy flavor and a high melting point, which allows it to be grilled or fried while keeping its shape.

Why are my haloumi fries too salty?

Haloumi naturally contains quite a bit of salt. Avoid adding much extra salt to the coating and choose a yogurt dip with little or no added salt. A squeeze of lemon can also help balance the salty flavor.

Can I use regular breadcrumbs instead of panko?

Yes. Regular breadcrumbs will work, although panko usually gives the fries a lighter and crunchier crust.

Can I make haloumi fries in an air fryer?

Yes. Lightly oil the crumbed pieces and cook them in a preheated air fryer at around 200°C (390°F) until crisp and golden, checking them during the final few minutes.

Can I freeze haloumi fries?

For the best texture, they are better made fresh. If you want to prepare them in advance, it is preferable to crumb the cheese and refrigerate it for a short period before cooking rather than freezing it for a long time.
