🧾 Ingredients

  • 1 cup Greek yogurt (or sour cream)
  • ⅓ cup mayonnaise
  • 1½ tsp chili powder (divided)
  • 1 tsp garlic powder
  • 1 tsp salt
  • 3 cups corn (fresh or frozen, thawed & drained)
  • 3 cups cooked chicken (shredded or diced)
  • 8 oz cotija cheese (crumbled, divided)
  • 3 tbsp fresh cilantro (chopped)
  • 2 tsp fresh lime juice (added after baking)

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, whisk together yogurt (or sour cream), mayonnaise, 1 tsp chili powder, garlic powder, and salt until smooth.
  3. Add corn, chicken, and most of the cotija cheese; mix well.
  4. Transfer the mixture to a greased baking dish and spread evenly.
  5. Sprinkle remaining cheese and chili powder on top.
  6. Cover and bake for 30 minutes, then uncover and bake 10–15 more minutes until bubbly and slightly browned.
  7. Let cool for a few minutes, then add lime juice and garnish with cilantro before serving.
