🧾 Ingredients
1 lb lean ground turkey
1 tbsp extra virgin olive oil
¼ tsp cumin
¼ tsp chili powder
¼ tsp red pepper flakes
⅛ tsp coriander
1 can (15 oz) black beans, rinsed & drained
1 can (15 oz) pinto beans, rinsed & drained
4–5 plum tomatoes, chopped
1 tsp chopped chili peppers
½ cup corn
¼ cup reduced-fat Mexican cheese blend
¼ cup fresh cilantro (optional)

Preheat oven to 350°F (175°C).
Heat olive oil in a pan and cook ground turkey until no longer pink.
Add spices (cumin, chili powder, red pepper flakes, coriander) and mix well.
Stir in beans, tomatoes, chili peppers, and corn.
Transfer mixture to a casserole dish.
Sprinkle cheese on top.
Bake for about 20 minutes until cheese melts.
