Coney Sauce Recipe

Coney sauce is a rich, savory meat topping traditionally served over hot dogs to make the famous Coney Island-style hot dog. Unlike chili, it’s smoother, slightly tangy and typically made without beans focusing on ground beef, onions and a blend of sweet and tangy condiments.

This recipe is inspired by the nostalgic Grandpa’s Classic Coney Sauce, a 1950s drive-in favorite known for its bold flavor and slow-cooked goodness.


Ingredients

  • 500 g – 1 kg ground beef
  • 1/2 cup finely chopped onion
  • 1 cup ketchup
  • 2–3 tbsp sugar
  • 2 tbsp white vinegar
  • 2 tbsp yellow mustard
  • 1/2 tsp celery seed
  • 1 tsp Worcestershire sauce
  • 1/2 tsp black pepper
  • Salt to taste

Optional: Garlic powder or chili powder (for added depth)


Step-by-Step Instructions

Step 1: Cook the Beef

In a large skillet over medium heat, add ground beef and chopped onions. Cook while breaking the meat into very fine crumbles until browned.

Step 2: Drain Excess Fat

Remove any excess grease to keep the sauce smooth and not oily.

Step 3: Add Sauce Ingredients

Transfer the cooked beef mixture to a pan or slow cooker. Add ketchup, sugar, vinegar, mustard, Worcestershire sauce, celery seed, salt, and pepper.

Step 4: Slow Simmer

Let the mixture simmer on low heat for 30–60 minutes (or up to 2–3 hours in a slow cooker). This helps develop the signature tangy and rich flavor.

Step 5: Adjust Texture

For a finer texture (classic diner-style), mash the mixture with a spoon or blend lightly.

Step 6: Serve

Spoon generously over hot dogs in buns. Top with chopped onions and mustard for authentic flavor.
