While store-bought versions are convenient, homemade pop tarts offer a richer flavor, a buttery crust, and the freedom to customize the filling exactly the way you like it. Whether you choose strawberry jam, raspberry preserves, or your favorite fruit spread, these homemade pastries turn a childhood favorite into a bakery-style treat that tastes far better than anything from a box.

Main Essence of This Dish

The beauty of homemade pop tarts lies in their contrast of textures. The pastry is tender and flaky, the filling is sweet and fruity, and the icing adds just the right finishing touch. Unlike packaged pastries, these are made with simple pantry ingredients and can be tailored to suit your favorite flavors.

How to Make Homemade Pop Tarts

Step 1: Prepare the Dough

In a large mixing bowl, whisk together the flour, salt, and sugar. Add the cold butter and cut it into the flour mixture using a pastry cutter or fork until the mixture resembles coarse crumbs with small butter pieces throughout.

Step 2: Add Water and Chill

Gradually pour in the ice water while mixing until the dough begins to come together. Divide the dough into two equal portions and shape each into a flat disc. Wrap them tightly and refrigerate for at least one hour.

Step 3: Roll and Cut

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. Roll one chilled dough disc into a rectangle about 1/8-inch thick. Trim the edges and cut the dough into eight equal rectangles.

Step 4: Add the Filling

Place four rectangles on the prepared baking sheet. Spoon a generous tablespoon of jam into the center of each rectangle, leaving a small border around the edges.

Step 5: Seal the Pop Tarts

Place the remaining rectangles over the filled pieces. Press the edges together and crimp with a fork to seal. Repeat the process with the second dough disc.

Step 6: Apply Egg Wash

Whisk the egg with one tablespoon of water. Brush the tops of the pastries lightly with the egg wash to encourage a beautiful golden finish.

Step 7: Bake

Bake for 22 to 25 minutes or until the pastries are golden brown and crisp around the edges. Remove from the oven and allow them to cool completely.

Step 8: Make the Icing

Combine powdered sugar, milk, and vanilla extract in a small bowl. Stir until smooth and pourable.

Step 9: Decorate and Serve

Drizzle the icing over the cooled pop tarts. Add sprinkles if desired and allow the glaze to set before serving.

Helpful Tips

  • Keep the butter cold for the flakiest pastry texture.
  • Do not overfill the pastries, or the jam may leak during baking.
  • Any thick fruit preserve can be used, including raspberry, blueberry, blackberry, or apricot.
  • Chilled dough is easier to handle and creates cleaner edges.
  • For extra flavor, mix a spoonful of jam into the icing.
