Ingredients

For the Cake

  • 1½ cups unsalted butter (softened)

  • 3 large egg whites

  • ½ tsp salt
  • 1 tsp citrus extract (lemon/orange/lime)
  • 2 tsp citrus zest

Step by Step Instructions

Step 1: Prepare the Oven & Pans

Preheat oven to 350°F (175°C). Grease and line three round cake pans with parchment paper.

Step 2: Cream Butter & Sugar

In a large bowl, beat butter and sugar until light and fluffy.

Step 3: Add Egg Whites

Add egg whites and beat until smooth and airy.

Step 4: Mix Dry Ingredients

In another bowl, whisk together flour, baking soda, baking powder, and salt.

Step 5: Combine Batter

Gradually add dry ingredients to the butter mixture, alternating with buttermilk. Mix until smooth.

Step 6: Divide & Flavor

Divide batter into three bowls:

  • Add lemon zest + extract (yellow layer)
  • Add orange zest + extract (orange layer)
  • Add lime zest + extract (green layer)

Step 7: Bake

Pour each batter into separate pans and bake for 25–35 minutes until a toothpick comes out clean.

Step 8: Cool Completely

Let cakes cool before frosting.

Step 9: Prepare Buttercream

Beat butter, powdered sugar, salt, cream, and citrus flavor until smooth and fluffy.

Step 10: Assemble the Cake

Layer the cakes with frosting in between. Cover the entire cake with buttercream.
