Baked Feta Potatoes

Baked feta potatoes are the kind of side dish that can make a simple dinner feel a little more special. Crispy roasted potatoes are combined with warm, creamy feta, roasted garlic, lemon, fresh basil, and a small drizzle of honey for a mix of salty, tangy, herby, and slightly sweet flavors. The potatoes are parboiled first, which helps them become tender inside while giving them plenty of time to turn golden and crisp in the oven.

This recipe is inspired by the popular baked feta style of cooking, but the potatoes are the star here. You can serve them alongside grilled vegetables, roasted chicken, burgers, a fresh salad, or almost any Mediterranean-inspired meal. They are also good enough to eat straight from the baking dish with a little extra lemon squeezed over the top.

What You Can Do Better

The biggest difference between good roasted potatoes and really crispy ones is giving them enough space and making sure they are not wet when they go into the oven. Parboiling the potatoes softens the centers, while letting them steam dry before roasting helps the outside brown properly. I also recommend adding the feta later rather than roasting it for the entire cooking time. This keeps the feta pleasantly soft instead of letting it become overly firm or rubbery.

For the best flavor, use a block of feta rather than a very dry crumbled variety if you have the choice. Fresh lemon and basil also make a noticeable difference, especially because they cut through the richness of the feta and olive oil.

How to Make Baked Feta Potatoes

1. Prepare the Potatoes

Preheat the oven to 200°C (390°F). Wash the potatoes well and cut them into fairly even bite-sized cubes. You can peel them if you prefer, but leaving the skins on gives the potatoes a more rustic texture and saves a little prep time.

Place the potatoes in a saucepan, cover them with water, and bring to a boil. Parboil for about 6 to 8 minutes. They should start becoming tender but should not be completely cooked. Drain them well and leave them for a few minutes so excess moisture can evaporate.

2. Season and Roast

Transfer the potatoes to a large baking dish. Add the olive oil, dried thyme, oregano, salt, and black pepper. Toss everything together so the potatoes are evenly coated.

Slice the top off the head of garlic to expose the cloves. Drizzle it with a little olive oil and wrap it loosely in foil. Place it in the baking dish alongside the potatoes.

Roast for about 30 to 40 minutes, turning the potatoes once or twice if needed. They should be golden around the edges and almost completely cooked before the feta goes in.

3. Add the Feta and Lemon

Take the baking dish out of the oven and carefully remove the roasted garlic. Place the feta in the center of the dish, allowing it to sit among the hot potatoes. Squeeze the juice from half of the lemon over the feta and potatoes.

Return the dish to the oven and bake for another 15 minutes. The feta should be warm and soft enough to mash easily, while the potatoes should have crisp edges.

4. Make the Roasted Garlic Mixture

Once the garlic is cool enough to handle, squeeze the roasted cloves out of their skins. Mash them into a smooth paste with the back of a knife or a fork. Roasted garlic has a much softer, sweeter flavor than raw garlic, so don’t be surprised by how mellow it tastes.

5. Bring Everything Together

Use the back of a spoon to gently break up the warm feta in the baking dish. Add the mashed roasted garlic, the juice from the remaining lemon half, and most of the chopped fresh basil.

Gently toss the potatoes through the feta and garlic mixture. Don’t mash everything into a smooth sauce. A few larger pieces of feta mixed with the crispy potatoes make the dish much more interesting to eat.

6. Finish and Serve

Drizzle the honey over the potatoes and scatter the remaining fresh basil on top. Finish with the red chili flakes and, if you like, another small squeeze of lemon.

Serve the potatoes while they are warm, when the feta is still soft and creamy and the edges of the potatoes are at their crispiest.

Tips for the Best Baked Feta Potatoes

  • Cut the potatoes evenly: Similar-sized pieces will cook at roughly the same rate and prevent some pieces from becoming too soft while others remain firm.
  • Don’t skip the steam-drying step: Wet potatoes tend to steam rather than roast, making it harder to get those crisp edges.
  • Give the potatoes room: If they are packed tightly into a small dish, they will not brown as well. Use a larger baking dish if necessary.
  • Add the feta later: This gives the potatoes time to crisp without overcooking the cheese.
  • Adjust the chili: Use less chili flakes for a milder dish or add a little more if you like some heat.
  • Use fresh lemon: Bottled lemon juice does not give quite the same fresh flavor in this recipe.

Easy Variations

Add tomatoes: Cherry tomatoes can be added during roasting for extra sweetness and acidity.

Make it more filling: Add cooked chickpeas, Kalamata olives, or thinly sliced red onion toward the end for a more substantial meal.

Try another cheese: Soft goat cheese or another creamy soft cheese can work if you do not have feta.

Use sweet potatoes: Sweet potatoes can be used instead of regular potatoes for a sweeter version, although the cooking time may vary depending on how they are cut.

Make it vegan: Use a suitable plant-based feta-style cheese and replace the honey with maple syrup or another plant-based sweetener.

What to Serve with Baked Feta Potatoes

These potatoes work particularly well as a side dish because their rich feta mixture pairs nicely with fresh and lighter foods. Serve them with a simple Greek salad, grilled vegetables, roasted chicken, falafel, chickpeas, or warm flatbread. A spoonful of tzatziki on the side is also a great match if you want even more of that Mediterranean flavor.

Storage and Reheating

Allow leftover potatoes to cool before transferring them to an airtight container. Store them in the refrigerator for up to 4 to 5 days. They can be reheated in the oven or air fryer to bring some of the crispness back. A microwave is quicker, but the potatoes will be softer.

Leftovers can also be served at room temperature as part of a potato salad-style meal. Add some fresh herbs and a squeeze of lemon just before serving to brighten them up again.

Frequently Asked Questions

Can I use crumbled feta?

Yes. Crumbled feta will work, although a block of feta is easier to roast and mash into the potatoes. If using crumbled feta, scatter it over the potatoes rather than trying to keep it in one large piece.

Why do I need to parboil the potatoes?

Parboiling gives the potatoes a head start. The centers become tender while the oven can concentrate on browning and crisping the outside. It also makes the final cooking time more predictable.

Can I leave out the roasted garlic?

Absolutely. The roasted garlic adds a sweet, mellow flavor, but the potatoes will still be delicious without it. For a quicker version, you can add a small amount of minced garlic when you add the feta.

Can I make these potatoes ahead of time?

You can prepare them a few hours ahead and reheat them before serving. For the best texture, reheat them in a hot oven or air fryer rather than the microwave.

Can I make Baked Feta Potatoes in an air fryer?

Yes, although you may need to cook the potatoes and feta in batches depending on the size of your air fryer. The important thing is not to overcrowd the basket, because the potatoes need good airflow to become crisp.
