There is something wonderfully comforting about a homemade chicken and leek pie. Tender chicken, sweet and buttery leeks, and a rich creamy sauce come together beneath a crisp, golden puff pastry topping. It is the kind of dinner that feels special enough for a weekend meal but is still simple enough to make when you are craving proper comfort food.
This version uses juicy chicken, plenty of leeks, garlic, celery, herbs, and a creamy sauce with a little mustard for depth. The filling is cooked first, allowed to cool, then topped with puff pastry and baked until beautifully golden. Serve it straight from the oven with a green salad, steamed vegetables, or buttery mashed potatoes.
What You Can Do Better
- Use chicken thighs if possible. They stay juicy and tender during cooking and baking.
- Wash the leeks carefully, especially between the layers, as they can hold hidden grit.
- Do not rush the sauce. Let it simmer until thick enough to coat the chicken and vegetables.
- Cool the filling before adding the puff pastry. Hot filling can soften the pastry before it reaches the oven.
- Use cold or only slightly thawed puff pastry for the best rise and flaky texture.
- Make a small steam vent in the centre of the pastry so steam can escape while the pie bakes.

How to Make Chicken and Leek Pie
1. Prepare the Leeks
Trim away the roots and the tough dark green tops of the leeks. Slice the remaining white and pale green sections in half lengthwise, then cut them into bite-sized pieces. Rinse thoroughly in cold water to remove any dirt trapped between the layers. Drain well.
2. Cook the Chicken
Season the chicken with a little salt and black pepper. Melt about half of the butter in a large skillet over medium-high heat. Add the chicken and cook just until the outside is lightly sealed. It does not need to cook through completely at this stage. Transfer the chicken and any juices to a bowl.
3. Cook the Bacon and Vegetables
Add the bacon to the same pan and cook until it begins to release its fat. Add the leeks, celery, and garlic. Cook for about 5 minutes, stirring regularly, until the vegetables soften and become fragrant.
4. Build the Creamy Sauce
Pour in the white wine and scrape the bottom of the pan to loosen any flavourful bits. Let the wine bubble for a minute or two. Add the remaining butter, then sprinkle the flour over the vegetables. Stir well and cook for about 1 minute so the flour loses its raw taste.
Gradually pour in the chicken stock while stirring continuously. Once the sauce begins to thicken, add the cream, Dijon mustard, thyme, bay leaf, salt, and pepper. Stir until smooth and creamy.
5. Finish the Filling
Return the chicken and any collected juices to the pan. Reduce the heat and simmer for 5 to 8 minutes, stirring occasionally, until the chicken is cooked and the sauce is thick and creamy. Remove the bay leaf.
The filling should be fairly thick rather than runny. If it looks too loose, simmer for a few more minutes. Remove the pan from the heat and allow the filling to cool completely.
6. Assemble the Pie
Preheat the oven to 400°F (200°C), or 375°F (190°C) for a fan oven. Spoon the cooled filling into a medium baking dish.
Lay the puff pastry over the top of the dish. Trim away any large excess and gently press the edges into place. Cut a small slit or cross in the centre to allow steam to escape.
7. Bake Until Golden
Brush the pastry with the beaten egg. Bake for 35 to 45 minutes, or until the pastry is deeply golden, crisp, and puffed. If the pastry starts browning too quickly, loosely cover the pie with foil for the remaining baking time.
Let the pie rest for 10 minutes before serving. The filling will be extremely hot straight from the oven and will thicken slightly as it rests.

Make-Ahead and Storage Tips
The filling can be prepared up to 2 days in advance and stored in an airtight container in the refrigerator. When ready to bake, transfer the cold filling to a baking dish, add the pastry, brush with egg, and bake.
Leftover pie can be refrigerated for up to 3 days. Reheat it in the oven rather than the microwave if possible, as this helps the pastry become crisp again.

Frequently Asked Questions
Can I use chicken breast instead of chicken thighs?
Yes. Chicken breast works, but take care not to overcook it because it can become dry. You can also use cooked shredded chicken and stir it into the sauce near the end of cooking.
Can I make this without wine?
Absolutely. Replace the wine with additional chicken stock. The pie will still have plenty of flavour.
Can I replace the leeks with onions?
Yes. If leeks are unavailable, use two large onions, sliced and cooked slowly until soft. The flavour will be slightly different but still delicious.
Can I make individual chicken and leek pies?
Yes. Divide the filling between oven-safe ramekins and top each one with a circle of puff pastry. Reduce the baking time slightly and bake until the pastry is puffed and golden.
Can I freeze chicken and leek pie?
Yes. The cooled filling can be frozen separately, or the assembled unbaked pie can be frozen. Thaw overnight in the refrigerator before baking. For the best pastry texture, it is generally better to add fresh pastry shortly before baking.
