Ingredients

  • ½ cup (1 stick) unsalted butter
  • 2 packages (10 oz each) mini marshmallows (divided)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 8 cups Rice Krispies cereal

Tip: Adding vanilla and salt enhances flavor, while reserving some marshmallows creates gooey pockets inside the bars.

Step by Step Instructions

Step 1: Prepare Your Pan Properly

Start by lining a 9×9-inch baking pan with parchment paper. Leave a little overhang on the sides so you can easily lift the treats out later. Lightly grease the parchment paper with butter or oil spray, this prevents sticking and helps achieve clean cuts.

Pro Tip: If you skip greasing, the mixture may stick and tear when removing.

Step 2: Melt the Butter Slowly

Place a large heavy-bottom saucepan on low heat and add the butter. Let it melt gently, this should take about 1–2 minutes.

Important Tip: Do NOT rush this step using high heat. High heat can burn the butter and ruin flavor

Optional Upgrade: Cook the butter slightly longer until it turns light golden and smells nutty (brown butter) for extra flavor.

Step 3: Melt the Marshmallows

Add most of the marshmallows to the melted butter (save about 2 cups for later). Stir continuously using a spatula.

The marshmallows will begin to soften, then fully melt into a thick, glossy mixture. This takes about 3–5 minutes on low heat

Key Tip: Always keep stirring to avoid sticking or burning at the bottom.

Step 4: Add Flavor Enhancers

Once the marshmallows are completely melted, remove the pan from heat immediately. Now stir in: Vanilla extract and a pinch of salt. This step balances sweetness and enhances overall flavor.

Step 5: Add the Cereal Gradually

Pour in the Rice Krispies cereal slowly (not all at once). Add 2–3 cups at a time. Gently fold using a spatula. Mix until every piece is coated with the marshmallow mixture.

Why gradual mixing matters: It prevents crushing the cereal and keeps the texture light and crispy.

Step 6: Fold in Extra Marshmallows

Now add the reserved marshmallows and gently fold them in. These won’t fully melt creating: Soft gooey pockets and better texture and visual appeal.

Step 7: Transfer to the Pan

Immediately pour the mixture into your prepared pan. Work quickly because the mixture starts setting fast.

Step 8: Press Gently (Very Important)

Lightly press the mixture into the pan using: A greased spatula OR buttered hands.

Golden Rule: Do NOT press too hard

Pressing too firmly will result in: Dense and hard treats instead of soft and chewy ones.

Step 9: Let It Cool Naturally

Allow the treats to cool at room temperature for 30–45 minutes. Do NOT refrigerate because it makes them hard and dry

Step 10: Cut into Perfect Squares

Once fully set: Lift the slab using parchment paper and place on a cutting board. Use a sharp knife to cut into squares

For clean cuts: Lightly grease the knife and Wipe between cuts if sticky.

  • Add most of the marshmallows (reserve 2 cups) and stir continuously until fully melted and smooth.
