Black Velvet Cupcakes

Black Velvet Cupcakes are the kind of dessert that gets attention before anyone even takes a bite. They have a deep, almost-black chocolate color, a soft and moist crumb, and a rich cocoa flavor that tastes somewhere between a classic chocolate cupcake and an Oreo-style dessert. The dark color comes mainly from black cocoa powder, so there is no need to rely on a large amount of black food coloring. A simple chocolate buttercream on top makes them even richer, while a few dark sprinkles can turn them into a fun Halloween treat.

What Makes Black Velvet Cupcakes Different?

The secret is black cocoa powder. It is a heavily alkalized cocoa with a very dark color and a smooth, mellow chocolate flavor. Because cocoa can make baked goods feel dry, this recipe balances it with buttermilk and vegetable oil. A small amount of vinegar helps the leavening work properly, while hot coffee brings out the chocolate flavor without making the cupcakes taste like coffee. The finished batter is quite thin, which is completely normal for this style of cupcake.

Ingredients

For the Cupcakes

  • 1 cup (125 g) all-purpose flour
  • 1/2 cup (45 g) black cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup (150 g) granulated sugar
  • 1/2 cup (120 ml) buttermilk, room temperature
  • 1/3 cup (80 ml) neutral vegetable oil
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon white vinegar
  • 1/2 cup (120 ml) hot brewed coffee or hot water

For the Black Chocolate Frosting

  • 1 cup (226 g) unsalted butter, softened
  • 3 cups (360 g) powdered sugar
  • 1/2 cup (45 g) black cocoa powder
  • 4 to 5 tablespoons heavy cream or milk
  • 2 teaspoons vanilla extract
  • 1/8 teaspoon salt

How to Make Black Velvet Cupcakes

1. Prepare the Oven and Pan

Heat your oven to 350°F (175°C). Line a standard 12-cup muffin pan with paper liners. This recipe makes about 12 to 14 cupcakes depending on how generously you fill the liners, so you may need a few extra liners.

2. Mix the Dry Ingredients

In a medium bowl, whisk together the flour, black cocoa powder, baking powder, baking soda, and salt. Mixing these ingredients first helps distribute the cocoa and leavening evenly throughout the batter.

3. Mix the Wet Ingredients

In a larger bowl, whisk together the sugar, buttermilk, vegetable oil, egg, vanilla, and vinegar until smooth. Add the dry mixture and whisk gently until combined. Slowly pour in the hot coffee while whisking. The batter will look thinner than a typical cupcake batter, so do not add extra flour.

4. Fill the Cupcake Liners

Divide the batter between the liners, filling each one about two-thirds to three-quarters full. Avoid filling them to the top because the cupcakes need room to rise without overflowing.

5. Bake

Bake for about 19 to 22 minutes. Insert a toothpick into the center of one cupcake; it should come out clean or with a few moist crumbs attached. Be careful not to overbake them, since the cupcakes are best when the center remains soft and moist.

6. Cool Completely

Let the cupcakes sit in the pan for about 10 minutes, then transfer them to a wire rack. Allow them to cool completely before adding the frosting. Frosting warm cupcakes will cause the buttercream to soften and slide.

7. Make the Black Chocolate Frosting

Beat the softened butter for about 2 minutes until creamy. Add the powdered sugar, black cocoa powder, vanilla, salt, and 4 tablespoons of cream. Start mixing on low speed so the sugar does not fly everywhere, then increase the speed and beat until the frosting is smooth and fluffy. Add another tablespoon of cream if the frosting feels too thick for piping.

8. Frost and Decorate

Spread the frosting over the cooled cupcakes with a small offset spatula or pipe it on using your favorite star tip. For a simple finish, add chocolate sprinkles or black sanding sugar. For Halloween, you can also decorate them with candy eyes, chocolate ears, or orange sprinkles to make little black cat cupcakes.

What You Can Do Better

  • Use good black cocoa: The cocoa is responsible for much of the cupcake’s color and flavor, so choose a quality black cocoa powder when possible.
  • Keep the ingredients at room temperature: Room-temperature egg and buttermilk blend more easily with the oil and help create an even batter.
  • Do not overfill the liners: Filling them too high can cause the cupcakes to rise over the edges and sink as they cool.
  • Use hot coffee for deeper chocolate flavor: Coffee does not make the cupcakes taste like coffee. It simply makes the chocolate taste fuller. Use hot water instead if you prefer.
  • Do not frost warm cupcakes: Give them enough time to cool completely so the buttercream stays thick and holds its shape.
  • Want a darker finish? Use black cocoa in both the cupcake batter and frosting rather than adding lots of black food coloring.

Black Velvet Cupcake Variations

Black Cat Cupcakes: Pipe tall swirls of black frosting and decorate them with candy eyes, chocolate triangles for ears, and orange sprinkles for the nose and whiskers.

Cookies and Cream: Crush a few chocolate sandwich cookies and fold some into the frosting or sprinkle cookie crumbs over the finished cupcakes.

Red Velvet Twist: If you want a dramatic black-and-red dessert, add a small red sugar decoration or red sprinkles to the top.

Mini Cupcakes: Use mini liners and reduce the baking time. Start checking them after about 10 minutes because they can go from perfectly baked to dry very quickly.

How to Store Black Velvet Cupcakes

Keep frosted cupcakes in an airtight container at room temperature for up to 2 days if your kitchen is reasonably cool. For longer storage, refrigerate them for up to 4 days. Let refrigerated cupcakes sit at room temperature for a little while before serving so the frosting softens and the chocolate flavor comes through properly. The unfrosted cupcakes can also be wrapped well and frozen for up to 2 months.

Frequently Asked Questions

Can I use regular cocoa powder instead of black cocoa?

Yes, but the cupcakes will not have the same deep black color. Dutch-process cocoa is a better alternative if black cocoa is unavailable, although the final shade will usually be lighter.

Can I skip the coffee?

Yes. Replace the hot coffee with the same amount of hot water. Coffee is used mainly to deepen the chocolate flavor, not to give the cupcakes a coffee taste.

Why is my cupcake batter so thin?

That is normal. Black cocoa absorbs liquid differently from flour, and the hot coffee also makes the batter quite fluid. As long as the ingredients were measured correctly, there is no need to add extra flour.

Can I make these cupcakes without frosting?

Absolutely. The cupcakes have enough chocolate flavor to serve on their own. A light dusting of powdered sugar or a simple chocolate glaze is also enough if you do not want a thick buttercream topping.

Can I make these ahead of time?

Yes. Bake the cupcakes a day ahead, let them cool completely, and keep them tightly covered at room temperature. Make the frosting separately and decorate them on the day you plan to serve them.
