American Chop Suey

American Chop Suey is one of those Indo-Chinese dishes that turns a few simple ingredients into something surprisingly satisfying. It combines crisp fried noodles with crunchy vegetables and a glossy sauce that brings together sweet, tangy, salty and mildly spicy flavours. The contrast is what makes the dish so enjoyable—the noodles stay crisp while the hot vegetable sauce adds plenty of flavour and moisture.

Despite its name, the version commonly served in Indian restaurants and homes is quite different from traditional American chop suey. This Indian-style preparation is usually made with crispy noodles, stir-fried vegetables and a thick tomato-based sauce. It is especially popular as a restaurant-style snack or light meal and is best eaten immediately after the sauce is poured over the noodles.

American Chop Suey Ingredients

For the Crispy Noodles

  • 150 g Hakka noodles or regular noodles
  • 4 cups water
  • 1/2 teaspoon salt
  • 2 tablespoons corn flour (cornstarch)
  • Oil, for deep frying

For the Vegetable Sauce

  • 1/2 cup finely shredded cabbage
  • 1/2 cup finely shredded carrot
  • 1/3 cup thinly sliced capsicum

  • 1/2 teaspoon finely chopped ginger
  • 1/2 teaspoon finely chopped garlic
  • 3 tablespoons tomato ketchup
  • 1 tablespoon soy sauce
  • 1/2 tablespoon sweet chilli sauce or red chilli sauce
  • 1 tablespoon sesame oil, peanut oil or vegetable oil
  • 1 1/2 cups water
  • 2 tablespoons corn flour (cornstarch)
  • 2 tablespoons water, for the corn flour slurry
  • 1/4 teaspoon black pepper
  • 1 teaspoon vinegar
  • 1/2 to 1 teaspoon sugar, or according to taste
  • Salt, as needed

For Garnishing

  • 2 tablespoons chopped spring onion greens
  • A little chopped coriander, optional

How to Make American Chop Suey

1. Cook the Noodles

Bring about 4 cups of water to a rolling boil. Add salt and then put in the noodles. Cook them until they are just tender but still have a slight bite. Do not overcook them, as soft noodles will be difficult to turn crisp later.

Drain the noodles and rinse them under cold water to stop the cooking process. Spread them out on a large plate or tray and allow them to dry properly. This step matters because excess moisture can make the noodles splutter when fried.

2. Coat and Fry the Noodles

Once the noodles are reasonably dry, sprinkle corn flour over them and gently toss until the strands are lightly coated. Heat oil in a deep pan or kadai over medium heat. Test the oil with a few noodle strands; they should rise steadily and begin to fry without burning immediately.

Fry the noodles in small batches until they become crisp and lightly golden. Avoid overcrowding the pan because it can lower the oil temperature and leave the noodles greasy. Transfer the fried noodles to a plate lined with paper towels and allow excess oil to drain.

3. Prepare the Sauce Mixture

In a small bowl, combine tomato ketchup, soy sauce and sweet chilli sauce. In another bowl, mix 2 tablespoons of corn flour with 2 tablespoons of water to make a smooth slurry. Keep both mixtures ready before starting the stir-fry.

4. Stir-Fry the Vegetables

Heat sesame oil or another cooking oil in a wok or wide pan. Add the chopped ginger and garlic and cook briefly until fragrant. Add the spring onions and stir-fry for about a minute.

Add the cabbage, carrot and capsicum. Cook over medium-high heat for a few minutes. The vegetables should soften slightly while retaining some crunch. American Chop Suey tastes much better when the vegetables are not cooked until completely soft.

5. Make the Thick Sauce

Lower the heat and add the prepared ketchup and soy sauce mixture. Stir well so the vegetables are evenly coated. Pour in the water and bring the mixture to a gentle simmer.

Give the corn flour slurry another stir because the starch settles at the bottom, then pour it slowly into the pan while stirring continuously. Cook for 2 to 3 minutes, or until the sauce becomes glossy and thick enough to coat the back of a spoon.

Add black pepper, vinegar, sugar and salt according to taste. Remember that soy sauce and ketchup already contain salt, so add it carefully. Taste the sauce and adjust the balance until it is pleasantly sweet, tangy and slightly spicy. Turn off the heat and stir in the spring onion greens.

6. Assemble the American Chop Suey

Place a generous portion of crispy fried noodles on each serving plate. Spoon the hot vegetable sauce over the noodles just before serving. Finish with spring onion greens or a little fresh coriander.

Serve American Chop Suey immediately. Waiting too long will allow the sauce to soak into the fried noodles and reduce their crisp texture.

What You Can Do Better

  • Keep the noodles crisp: Make sure the boiled noodles are well drained and reasonably dry before frying.

You can easily change this American Chop Suey according to what is available in your kitchen. Add mushrooms and baby corn for a more substantial vegetable version, or include broccoli and sweet corn for extra colour. For more heat, add red chilli sauce or a little green chilli sauce. Whole wheat noodles can also be used if you prefer them over regular noodles.

Serving Suggestions

American Chop Suey works best as a complete dish on its own, but it can also be served as part of an Indo-Chinese meal. It pairs nicely with spring rolls, chilli paneer, vegetable fried rice or a simple soup. Keep the crispy noodles separate until serving if you are preparing the dish ahead of time.
