Aamchi Mango

Aamchi Mango is a traditional dish from Maharashtra that beautifully captures the region’s love for bold, balanced flavors. Made primarily from raw (unripe) mangoes, it combines tanginess with sweetness and a hint of spice, creating a refreshing and vibrant side dish.

The word “Aamchi” loosely translates to “our” or “homestyle,” which reflects how deeply rooted this preparation is in local households. It’s often made during the summer season when raw mangoes are abundant. The dish typically includes ingredients like jaggery for sweetness, turmeric for color, red chili powder for heat, and a simple tempering of mustard seeds and asafoetida for aroma.

What makes Aamchi Mango special is its versatility. It can be served as a quick pickle, a chutney-like side, or even enjoyed with simple meals like dal-rice or roti. The contrasting flavors—sour, sweet, and spicy—make it both comforting and refreshing in hot weather. Beyond taste, it also carries a sense of nostalgia and tradition, often reminding people of homemade meals and seasonal cooking.

Ingredients:

  • 2 medium raw mangoes (peeled & chopped)
  • 2–3 tbsp jaggery (adjust to taste)
  • ½ tsp turmeric powder
  • ½ tsp red chili powder
  • Salt to taste
  • 1 tbsp oil
  • ½ tsp mustard seeds
  • 1–2 dried red chilies
  • A pinch of asafoetida (hing)

Instructions:

  1. Heat oil in a pan and add mustard seeds. Let them splutter.
  2. Add dried red chilies and hing, sauté briefly.
  3. Add chopped raw mango pieces and cook on medium heat for 5–7 minutes.
  4. Mix in turmeric, chili powder, and salt. Stir well.
  5. Add jaggery and cook until it melts and coats the mango pieces.
  6. Cook until the mixture thickens slightly and becomes glossy.

Let it cool and serve as a side with roti, dal-rice, or even paratha. It’s a perfect balance of tangy, sweet, and spicy flavors.
