Bill Post helped invent Pop-Tarts
Post, the largest rival of Kellogg’s had a method for dehydrating food and wrapping it in foil to preserve its freshness in the beginning of the 1960s.
They modified the procedure to create a new toaster-prepared breakfast pastry because they were trying to grow their morning business and had originally used it for dog food.
In 1964, Post called its new product “Country Squares” and revealed it to the media a few months before it was released onto the market.

Kellogg’s wanted to make their own version of Country Squares after finding out about them. They hired Bill Post, a guy who used to work for Keebler and managed to create their own breakfast pastry in a short amount of time. At first, they called it Fruit Scones but then they changed the name to Pop-Tarts as a play on words with the popular Pop Art movement.
Pop-Tarts were a big hit and people loved them so much that Kellogg couldn’t make enough to meet the demand. When the first batch of Pop-Tarts reached stores, they flew off the shelves within two weeks leaving empty shelves everywhere.
Kellogg’s even had to apologize through advertisements for not having enough stock. Instead of decreasing interest, this apology only made more people want Pop-Tarts. In the beginning, Pop-Tarts were available in four flavors: strawberry, blueberry, brown sugar cinnamon, and apple currant (which was later changed to apple-berry). In 1968, Sprinkles were added to several flavors.
There are over 20 standard Pop-Tart flavors, including hot fudge sundae, raspberry, s’mores and grape, as of 2024.
